Elodie's Fresh Salad

Recipe by Elodie Ackerman

Ingredients:
Strawberries & blueberries
olive oil
vinegar
kosher salt and pepper
Romaine lettuce
cooked, chopped chicken
chopped italian onions
gorgonzola

Method:
You take the olive oil and the vinegar and mix it up together. About one-part vinegar to three parts olive oil. You know, the usual way you mix an oil-and-vinegar dressing. Then you chop up those strawberries and dump them into the dressing with the blueberries, along with a dash of salt and pepper. I like Kosher salt, myownself.
Then you just cut up some of that Romaine into a bowl, along with the chicken (cut into bite-sized pieces), the onions and the gorgonzola.
Then just take a nice big spoon and spoon that fruit and dressing mixture over the salad and toss it. It's refreshing and a really nice, surprising taste combination. And it feels like you're eating something really healthy.
