ATOLE- Mexican Hot Chocolate
  Ingredients:
6 quarts WATER
4 sticks cinnamon
3 cups masa harina
2 1/2 tablets mexican chocolate
6 whole mex raw sugar

 
   
   

Method:
Put all ingredients into a large pot ans simmer for30 + minutes.

Gorditas
  Ingredients:
3 1/2 cups Masa corn flour
2 1/4 cups Warm water
1/4 cup Oil
1 teaspoon Salt
2 teaspoons Flour
1/4 teaspoon Cumin
 
Serves 6.
 
   

Method:
Combine all ingredience. Make patties 4 inches in diameter and 1/4 inch thick. Fry patties in oil. Stuff it sandwich style with your favorite mexican stuffings, ie, refried beans, green chilies, onions, meat, cheese, lettuce, cilantro and sour cream.

Guacamole    
  Ingredients:
3 medium avocado
5 1/2 medium tomato chopped
1/2 medium onion chopped
1/2 bunch cilantro chopped
1/2 lime juice
2 cloves garlic chopped

Method:
Mash avacados. Add rest of ingredients in order. Serve with chips. Serves 10.

Enchilada Mole sauce
Ingredients:
1 T vegetable oil
1 cup diced onion
3 T chopped garlic
1 tsp oregano
1 tsp ground cumin
1/4 tsp cinnamon
3 T flour



5 T chili powder
4-1/2 cups chicken broth
half oz. semi-sweet chocolate
1/2 can tomato paste

Method:
In chopper or food proccesor, chop garlic & onion very finely.Heat oil in pan and saute onion & garlic until tender. Add spices.
Stir in flour & cook until thickens. Slowly wisk in chicken broth.
Cook down. Melt chocolate in at last.

Serves 12.

Indian Cucumber Raita-Dipping Sauce    
  Ingredients:
8 ounces plain low fat yogurt
1/2 cup cucumber finely chopped,seede
1/2 cup green onion minced
2 tablespoons mint chopped
1/4 teaspoon cumin


 
 
         
 

Method:
Combine all ingredients in Med. bowl & mix well. Season with salt.

Serves 2.

Indian Fry Bread
  Ingredients:
3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup lukewarm water
8 cups vegetable oil for frying
TOPPINGS:
Chiles
Chilli
Onion
Sour cream
Cheese
Cilantro

Serves 12.
 

Method:
Mix together the flour, the baking soda and salt in a large bowl. Slowly add the water until the dough is soft , but not sticky. Turn out into a lightly floured board and knead gently. Cover with a cloth and let stand 15 min.
In a large heavy pot or deep fryer, heat the oil to 375?, or until a small piece of dough browns in 60 seconds.
Divide the dough into 12 pieces and roll each piece flat into a disc about a 1/4 inch thick. With a fork, pierce each round several times. This allows the dough to puff when it is cooked in the oil.
Drop the rounds into the hot oil and cook until bubbles appear on the top side; turn over and fry until both sides are golden brown. Drain on paper towels and serve hot.

Notes: A staple of the family meal on the Navajo Reservation, fry bread is also a treat at native American festivals throughout the Southwest. Served with honey or confectioners' sugar, fry bread is a snack; topped with chilies, stews or cheeses and vegetables it becomes a meal in itself.

 
       
 
                     
                             
 
 
 
     
Michelle's Green Enchiladas    
  Ingredients:
1 package corn tortillas
1 large can green enchilada sauce
1 package Ranchero cheese cut into long strips
1 package mexican pre-shredded cheese
1 sm. can diced green chili peppers
celantro
 
 

Method:
Spray large casserole bowl with cooking spray.
Steam package of corn tortillas in microwave for about 1-1/2 min.
Take tortilla out one at a time making sure to keep heat in the bag and stuff w/ Ranchero cheese strips, green chilis and celantro, roll up in tortilla and place in casserole dish.
Repeat until casserole dish is full. Top with whole can of green sauce, mex. cheese,celantro and any left-over chilis.
Bake 350? for 30 min.

Notes: You can also stuff these with beef or chicken!

  Ingredients:
4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg beaten
6 tablespoons plain low-fat yogurt
3 tablespoons butter melted
1 cup milk
1 teaspoon salt
 

Method:
Mix dry ingredients. Gradually add wet ingred. to make soft dough.
Let dough set for 2 hours. Make several small flat loaves, brush with water and place wet side down on greased baking sheet and bake for 8-10 min. @ 400?
