Swedish Meatballs

Ingredients:
1-1/2 pounds ground pork
1 cup soft bread crumbs
1/3 cup half and half
1 egg
1/4 cup finely chopped onions
1 tsp salt
1/4 tsp pepper
1/4 tsp ground allspice
1 tsp vegetable oil
1/4 cup flour
1 can (14 oz) chicken broth
1-2/3 cups half and half
2 tbsp snipped fresh dill

Fiskefrikadeller
(Seafood Meatballs)

Ingredients:
1 lb fish fillets
1 medium onion, chopped fine
3 tbsp flour
3 tbsp corn starch
2 eggs
3 tbsp dill (optional)
11/2 tsp salt
freshly ground pepper
1/2 cup milk
6 tbsp butter

Method:
Check fish fillets for bone, then cut them into smaller pieces.
Peal and chop onion, add to fish.
Grind fish and onion in meat grinder.
Add flour, corn starch, dill, salt and pepper. Stir together.
Add milk a little at a time while stirring.
Place covered mixture in refrigerator for one hour.

Melt butter in pan until golden, then add large spoonsful of fish mixture, flatten with spoon until about 1” thick.

Cook slowly with low heat for about 8 minutes on each side

Liver

400 g = 14 1/2 oz

600 g = 21 1/2 oz

800 g = 28 1/2 oz

1000 g = 35 oz

Bacon

Margarine

50 g = 1 3/4 oz

75 g = 2 1/2 oz

100 g = 3 1/2 oz

125 g = 4 1/2 oz

Flour

50 g = 6 tbsp *

75 g = 9 tbsp *

100 g = 12 tbsp *

125 g =15 tbsp *

Milk

4 dl = 1 2/3 c.

5 dl = 2 c.

6 dl = 2 1/2 c.

7 dl = 3 c.

Eggs

1 egg

1 1/2 egg

2 eggs

Onion

* 50 g = 6 tbsp = betw. 1/4 & 1/2 cup
   75 g = 9 tbsp = betw. 1/2 & 3/4 cup
  100 g = 12 tbsp = 3/4 cup plus
  125 g = 15 tbsp = 1 cup
Method:
Grind liver, bacon, onions and potatoes in meat grinder -
Blender can also be used.
Make a sauce / stew of margarine, flour and milk -
Taste with salt and pepper -
mix everything together -
pour into loaf pans or small oven safe bowls -
place loaf pans in oven in shallow pan filled with water -
Bake at 325 for about 1 1/2 hours -

Original Ginger Lemon Cookies

Ingredients:
1/2 cup (1 stick, 1/4 pound)), unsalted butter
1 cup (1/2 pound) sugar
1 egg
1 1/4 tsp grated lemon peel
1/2 tsp vanilla extract
1 cup (1/2 pound) flour
1 1/2 tsp. baking powder
1 tsp. ground ginger
1/4 tsp salt

Method: This is what I do instead of the instructions:
Beat with mixer, fold together and refrig. for one hour.
Form into small balls, approx. 1 tsp. 
Place on cookie sheet 2 inches apart. Dip bottom of cup in water and sugar and press cookies flat. Bake at 350 for 18 min.

Mix everything in a bowl, using mixer.  Roll into one or two logs, about 1 1/2 “ diameter.  Cover in foil and put in refrigerator overnight.  
(Easier when placed in Freezer) Slice into  1/4 ” slices, place on cookie sheet (I use parchment), 1/2  - 3/4 inch apart, as they expand.  Bake.

MACAROONS .... Odense Marzipan

Ingredients:

1 roll 7 oz. Odense pure almond paste
3/4 cup granulated sugar
1/4 cup egg whites, slightly beaten
1 tbsp flour

Method:
Blend almond paste and sugar in electric mixer -
add egg whites until smooth but not runny -
add flour -
pipe out onto greased and floured aluminum foil to about 1" diameter -
leave room to double in size -
bake 3250 for 15 minutes or until golden -
do not remove from foil until cool -
makes about 30 -

Method:
Combine pork, bread crumbs, 1/3 cup cream, egg, onion, and seasonings. Mix well. Shape mixture into 18 2 inch balls. Heat oil in non-stick pan.
Brown meatballs over medium heat, turning carefully. Remove from skillet.
TK Note:
The potatoes are my own idea, they make the liver a bit milder
And – instead of the ginger I used vanilla or almond extract or powder.   Or you can use whatever, but if you use liquid, do add more flour or compensate in some other way.
