Sweet N Sour Chicken Platter Ingredients:
3 lrg eggs
1/4 cup milk
1 1/2 cups flour
1 teaspoon garlic salt
pepper
2 green & red pepper sliced
1 lrg carrot sliced
3 pear tomatoes sliced
1 bunch green onion
2 cups cauliflower
4 cups cooked rice
1 package chicken breasts cubed
Method:
Mix together first 5 ingredients to make batter. Set aside. Prepare basmati rice to make 4 cups. Cube raw chicken breasts. Slice all vegetables.
Prepare Sweet N Sour sauce. Add oil to deep fat fryer, turn on. Place cubed chicken in batter and fry in oil.
Serve in platter layered:
Rice on bottom, vegetables, chicken, topped with Sweet N Sour.
Serves 6.

| Masayo's Chicken Curry |
Ingredients:
1 tablespoon curry powder
1 onion minced
1/2 cup mushroom sliced
1 cup light whipping cream
2 tablespoons cornstarch
1 tablespoon butter
1 cup celery sliced
1/2 cup condensed beef broth
1 cup milk
2 tablespoons cold water
1 teaspoon salt
2 cups cooked chicken diced
6 cups steamed rice
Method:
Saute curry in butter. Stir in vegies.(onion, celery, mushroom)
Add beef broth. Bring to boil.
Stir in cream, milk, and bring to boil.
Combine corstarch w/ cold water and add to sauce.
Cook until thickened then add cooked chicken and salt.
Serve over rice.

Masayo's Chicken Marsala
Ingredients:
2 Chicken breasts
1 cup sliced mushrooms
1 cup Oyster Mushrooms cut up
1/2 cup onion chopped
1/2 cup green onion chopped
2 cloves garlic chopped
1 cup chicken or beef broth
1 cup Fat Free half N half
3/4 cup Marsala wine
2 servings Cooked Rice or Pasta
2 tablespoons Oil for frying
Method:
Season and brown chicken and onion in oil. Add garlic and mushrooms and brown a little more.
Add chicken or beef broth and Marsala Wine. Simmer for 20 min.
Add half N half and simmer until thickens, or you may want to make it thicker with a corstarch and water mixture.
Spoon over rice or pasta. Sprinkle w/ green onion.

Masayos Chicken Stroganoff |
Ingredients:
4 Organic Chicken breasts
3 cups beef broth
1 cup sliced mushrooms
1/2 cup Oyster Mushrooms cut up
1/2 cup onion chopped
1/2 cup green onion chopped
2 cloves garlic chopped
1/2 cup to 1 cup of sour cream
3 T Worcestershire sauce
1 cup of white wine
Pasta (flat egg noodles prefer)
2 tablespoons Oil for frying
flour for coating
onion powder and salt/pepper
Chop chicken up in 1" pieces. Lightly coat with flour by shaking chicken pieces up in a bag. Put in pan to fry and season with the onion powder and salt/pepper. Fry in the oil on high heat to brown, then turn it down to med/high. and add onions & garlic. Cook for 10 min or so until slightly browned and add the wine. Simmer for 5 min and add beef broth. Add mushrooms and turn down to low, cover and cook for 45-60 min.
Broth will reduce.
After simmer, and broth is reduced, add the 1/2 c. sour cream (or more to your taste). Add more salt & pepper as needed. Dill is good too.
Mix sour cream well and cook until "married" a few minutes. Serve over pasta. Garnish with green onion (or fresh parsely). |

Spicy Indian Chicken Patties
Ingredients:
1 1/4 pounds ground chicken breast ground
4 green onion chopped
3 tomato (seeded) peeled and chopped
2 tablespoons fresh cilantro chopped
1 1" piece fresh ginger grated
1 clove garlic chopped
1 teaspoon ground cumin
1 teaspoon Garam Marsala
1 egg beaten
1 1/2 cups Contadena Seasoned bread crumbs
1/4 cup vegetable oil
Salt and red pepper to taste
Method:
Put ground chicken in a large bowl with the green onions, tomatoes, cilantro, ginger, garlic, cumin, Garam Marsala,salt & pepper, egg,
and 1/2 of the bread crumbs.
Mix thoroughly, then divide into 18 pieces and form into patties.
Roll patties in remaining bread crumbs to coat completely.
Heat oil in large skillet and fry patties until golden and making sure there is no pink in the centers.

Mini Turkey Meat Loaves with Red Pepper Sauce

Ingredients:
5 tablespoons extra-virgin olive oil
1 carrot, finely chopped
1 celery rib, finely chopped
1 garlic clove, minced
1 large onion, finely chopped
Kosher salt and freshly ground white pepper
1 1/2 pounds ground lean turkey, white meat only
2 large egg whites
1/2 cup panko
1/2 cup low-fat cottage cheese
3 red bell peppers, sliced
1 thyme sprig
1/2 cup water
1 tablespoon half-and-half
1 yellow bell pepper, sliced
Cooked wild rice, for serving

Method for Mini Turkey Meat loaves (above recipe):
1. Preheat the oven to 400°. Lightly oil two 6-by-3 1/2-inch metal loaf pans. In a skillet, heat 2 tablespoons of the oil. Add the carrot, celery, garlic and two-thirds of the onion; season with salt and white pepper and cook over moderate heat, stirring, until softened, about 10 minutes. Let cool.
2. Add the turkey and cooked vegetables to a large bowl. Add the egg whites, panko, cottage cheese, 2 teaspoons of salt and 1/2 teaspoon of white pepper. Knead until blended and divide between the pans. Place the pans on a baking sheet and bake in the upper third of the oven for 35 minutes or until an instant-read thermometer registers 160°. Remove from the oven and preheat the broiler.
3. Meanwhile, in a skillet, heat 2 tablespoons of the oil. Add two-thirds of the red peppers, the remaining onion and the thyme. Cover and cook over moderate heat until softened, 10 minutes. Add the water, cover and simmer until the peppers are very tender, 7 minutes. Discard the thyme. Transfer the contents of the skillet to a blender, add the half-and-half and puree. Season with salt and pepper.
4. In a skillet, heat the remaining 1 tablespoon of oil. Add the remaining peppers and cook over moderate heat until softened, 10 minutes. Season with salt and pepper.
5. Broil the meat loaves 4 inches from the heat until browned, 2 minutes. Turn the loaves out onto a plate and cut into 1/2-inch slices. Spoon the pepper sauce onto plates. Top with the meat loaf and peppers. Serve with wild rice and the remaining sauce.

3.3 gm fiber. |

Mom's Garlic Chicken Parmesan |
Ingredients:
Chicken breast cut into 3" pieces
melted butter
6 cloves minced garlic
1-2 cups bread crumbs
fresh parmesan cheese
oregano
Method:
Preheat the oven to 400°.
Mix garlic and oregano with melted butter.
Dip chicken in melted butter, then in bread crumbs
Place on cookie sheet and bake 15 min.
Notes: OMG! This is good and garlicky!
Serves 4-6.
