Ingredients:
1 1/2 cups all-purpose flour
3/4 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
3/4 cup toasted wheat germ
1 1/2 cups mashed ripe bananas (about 3)
1/2 cup milk
2 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
Method:
Preheat oven to 400°F. Line 16 muffin cups with foil muffin papers.
Sift first 4 ingredients into medium bowl. Mix in wheat germ. Combine bananas,
milk, eggs, oil and vanilla extract in large bowl and whisk to blend. Mix in dry
ingredients. Spoon batter into prepared muffin cups, dividing equally.
Bake muffins until tops are golden brown and tester inserted into center comes out clean, about 25 minutes. Serves 15.
Banana Chocolate Bread Pudding

Ingredients:
4 tablespoons unsalted butter melted
4 large eggs lightly beaten
1 cup brown sugar
3 cups heavy cream
1 cup milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 banana mashed
6 day old bread cubes
6 ounces bittersweet chocolate chopped
Method:
Preheat oven to 350?. Brush a baking dish (10x14) with 2 T. of the melted
butter. In a large bowl, whisk together the eggs, brown sugar, cream & milk.
Add the vanilla, cinnamon, bananas, bread & chololate and stir to blend
thoroughly.Stir the remaining 2 T. of melted butter into the pudding mixture and pour into the baking dish.
Set the baking dish in a large baking pan and pour hot waterin to within 1 inch of the top of the dish. Bake until firm, about 1 hour.
Serves 15.

2 cups cornmeal
1/2 - 1 cup milk
1 cup sugar
2 eggs
1 tablespoon baking powder
2 sticks butter
1/2 teaspoon salt
Method:
Mix flour, cornmeal, sugar, baking powder and salt in large mixing bowl. Make a well in the center of the mix and add add eggs one at a time while mixing. Start adding milk until correct consistancy is achieved. Melt butter in the 9 x 11 pan (coat pan) Pour remaining butter into mixture and mix well . Bake 400 for approx. 30-40 min. until golden around edges.
